Cabernet Sauvignon

2012 Cabernet Sauvignon

Our 2012 Cabernet Sauvignon is a deep, brilliant purple with a restrained nose of dark spice, cassis, red currant, and blueberries. Full-bodied, elegant and silky in texture-packed with blackberry, violets and plum reserves, finishes long and lush, with fine, suave tannins, and notes of cinnamon and chocolate-laced oak. Youthful and exuberant with great depth, our 2012 Cabernet Sauvignon will gain rich complexity for many years.

In the vineyard

Summer was warm with no prolonged, excessive heat events. Late Summer and early Fall brought on slightly cooler daytime highs-a pattern than coninued well into October, allowing late varietals like our Cabernet Sauvignon to thoroughly complete ripening.

Cabernet Sauvignon: 49% Minnick Hills, Birch Creek and Pepper Bridge Vineyards (Walla Walla Valley); 29% LaCoye Vineyard (Red Mountain); 22% Dionysus Vineyard (Columbia Valley)

Petit Verdot: 100% Dionysus Vineyard (Columbia Valley)

Appellation Columbia Valley

In the cellar

We chose some of the best Cabernet Sauvignon vineyards in Walla Walla for this wine. Cabernets made from these vineyards show dense red fruit with rich earth and minerality. One of our warmest sites, Dionysus Vineyard, slopes towards the mighty Columbia River. Its Cabernet and Petit Verdot grapes provide lush, vibrant, fresh ripe fruit with dense tannins forming the backbone of this wine. Red Mountain Cabernet Sauvignon from LaCoye Vineyard has exceptional color, strength and richness, providing ample structure to our generous 2012 Cabernet Sauvignon.

In the glass

Deep, brilliant purple. Full-bodied, elegant and silky in texture.

NOSE: dark spice, cassis, red currant, blueberries

MOUTH: blackberry, violets, plum preserves, notes of cinnamon and chocolate-laced oak

FOOD & WINE PAIRING: red wine-braised short-ribs, juicy grilled rib-eye, braised lamb shank or pan-roasted veal chops with Cabernet reduction

The 2012 Columbia Valley Cabernet Sauvignon is also outstanding, yet will require short-term cellaring to come around. Incorporating 10% Petit Verdot, it has lots of chocolate, licorice, roasted herbs and dark fruits to go with a full-bodied, young and concentrated feel on the palate. Aged 18 months in French oak (33% new), give it 2-3 years and drink bottles through 2027.
