2007 Cabernet Sauvignon
The growing season in 2007 was one we all dream of with an early start for bud break, followed by a hot summer for earlier than normal ripening. As harvest approached, mother Nature cooled things off a bit to allow for longer hang time resulting in bold flavors with great balance.
Our 2007 Cabernet is truly a wine from the "dark side" with it's inky color. Aromas of blackberry, plum, fresh cracked black pepper and smoky cedar fill your senses. The opulent mouth is precise and intensely flavored. Rich with dense, dark berries and pomegranate integrated with balanced acids and terrific spice for aging.
With a wine this incredible, the next step is deciding what to pair it with. Of course, a bacon wrapped filet mignon would be awesome! However, hearty beef stroganoff or braised lamb shank would be equally enjoyable.
