Paired with the "Water Buffalo" course, Forgeron's 2011 Ambiance (92 Points "Editor's Choice", Wine Enthusiast) with crisp, bright acidity & hint of spice accents the "Tempura of Braised Water Buffalo Short Rib" while balancing the accompanying "Medley of Lightly Pickled Winter Vegetables, Winter-Gathered Tuberous Oxalis & Nasturtium Roots, Puffed Beef Tendon."
